Ingredients
- 1 stick margarine
- 2 cups flour, sifted
- 1/2 cup shortening
- 1 cup pecans, chopped
- 2 cups sugar
- 1 t. salt
- 5 eggs, separated
- 1 t. baking soda
- 1 cup buttermilk
- 2 t. vanilla
- 2 cups coconut
Preparation
Step 1
Cream margarine, shortening, and sugar. Add egg yolks one at a time. Add buttermilk, coconut, flour, pecans, salt, baking soda, and vanilla. Beat well. Beat egg whites until fluffy and fold into first mixture gently, but thoroughly. Bake in 3 greased round layer pans at 350 degrees for 25 to 30 minutes. Spread Italian Cream Cake Icing between layers and on sides (recipe follows).
