Ingredients
- 1 cup mixed berries
- 1 cup "milk"
- 1 tbsp vanilla extract
- 1/3 cup sugar
- 3 tbsp cornstarch
- 1/8 tsp salt
Preparation
Step 1
In a food processor, blend fruit with "milk" and vanilla until smooth and set aside. In a medium saucepan, stir together the sugar, cornstarch, and salt. Whisk in 1/4 cup of "milk" mixture to make a paste. Stir in the remaining "milk" mixture and bring to a boil, stirring constantly. Reduce heat and simmer for 1 minute or until pudding starts to thicken. Portion evenly into shallow glass bowl. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
