Spicy Mashed Sweet Potatoes

Ingredients

• 3 large sweet potatoes
• 1 tsp fresh lime juice
• 3 oz. cream cheese
• 1/3 c. sour cream
• 1/2 stick melted butter
• 1 clove garlic or 1/4 tsp garlic powder
• 1 tsp chipotle seasoning
• Salt to taste

Preparation

Step 1

Bake sweet potatoes in 400 degree oven until soft, about 45 minutes. Scoop out pulp with melon baller or spoon. In bowl, combine potatoes & remaining ingredients. Mash all together with fork or potato masher & reheat.
