Chicken Liver Pate

Ingredients

  • 6 Eggs ; hard-boiled
  • 3 small Onions ; chopped
  • Butter ; Lots of it!
  • 1 pound Chicken Livers
  • 1 pinch Thyme ; to taste
  • 1 pinch Summer Savory ; to taste
  • Salt ; to taste
  • Pepper ; to taste
  • 1 Bay leaf
  • White wine ; a few swigs

Preparation

Step 1

Saute chopped onions in lot of butter for 3 minutes.

Add chicken livers and continue to saute.

Add a good pince of thyme and summer savory, salt and pepper to taste, and a bay leaf.

Add a few swigs of white wine.

After 15 minutes, put one cup at a time into the blender with 1 or 2 eggs.

Save one egg for garnish.

If there is not enough liquid, the blender will jam - if too much, it won't set properly.

Pour into a mold and chill. Top with chopped egg.
