Ingredients

  • Onion Sage Quiche
  • 1 9 inch pastry crust
  • 1/2 cup of milk or half and half
  • 1/2 cup mozzarella cheese
  • 4 eggs, beaten
  • 5 to 8 splashes of tabasco
  • 1/2 teaspon sea salt
  • pepper to taste
  • 1/2 medium yellow onion, sliced
  • 4 or so chopped sage leaves or 1/2 teaspoon of rubbed dry sage
  • 1/2 cup cheddar cheese, sharp if you like it or any cheese you have on hand

Preparation

Step 1

Line a 9 inch pie pan with the pastry.
Sautee the onion and sage until the onion is starting to caramalize. Mix the beaten eggs with the milk, tabasco and salt and pepper. Put mozzarella cheese in the bottom of the pastry. Put cooked onion and sage with cheddar or other cheese next. Pour the milk and eggs mixture over and bake for 350 degrees for 30 minutes.
It will get lightly browned and puffy when ready. Enjoy!!
