Ingredients
- 2 c almond meal
- 1 c plus 2 T whey protein powder
- 1 c plus 1 T xylitol
- 1/2 c shredded unsweetened coconut
- 3 T coconut flour
- 3 T brown rice flour
- 21/2 T ground cinnamon
- 1 3/4 t baking powder
- 2 1/4 t xanthan gum
- 1 c coconut oil
- 3 large egg whites
- 1 1/4 t vanilla extract
- 3/4 t almond extract

Preparation
Step 1
1. preheat oven to 300. cover 2 large baking sheets with parchment paper.
2 place all dry ingredients in a large bowl and mix. in a medium bowl whisk coconut oil, egg whites and extracts. add to dry ingredients and mix well.
3. roll dough to 1/4 inch thick and cut into 2 inch squares. bake until golden.
4. Let cool and freeze or store up to 4 days in airtight container.
