GREEK POTATO SALAD

Ingredients

  • 2 lbs. new potatoes
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried oregano

Preparation

Step 1

Cook potatoes in boiling salted water to cover 30 minutes. Cool slightly, cut into 1” pieces. Whisk together oil, and next 5 ingredients, toss with potatoes. Makes 5 cups.
