Roasted Red Pepper Soup

Ingredients

  • 2 Red Bell Peppers
  • 1/2 red onion
  • 1/2 yellow onion
  • 1/4 lb. Butter
  • 1/2 C flour
  • 1 qt cream
  • 1 qt chicken broth
  • 1 C tomato past
  • 1/4 C cilantor or parlsey or basil
  • 1 T pepper

Preparation

Step 1

Roast red peppers over fire or under broiler & put in paper bag for 15 minutes.

Julienne eppers and onions and saute in butter on medium low for 15-20 minutes. Add flour and stir. Stir in cream and broth and tomato paste. Season with pepper and cilantor or parsley or basil.
