Ingredients
- 1 large chopped carrot
- 1 medium chopped onion
- 2 teaspoons canola oil
- 1.25 oz. packet low-sodium chili seasoning
- 1/2 cup no salt added tomato sauce
- 1 1/2 cups no salt added V-8 juice
- 14.5 oz. undrained fire-roasted diced tomatoes
- 15 oz. can EACH rinsed - low-sodium black beans and great northern beans
- 1 medium EACH diced - zucchini and yellow squash
- 1/2 cup frozen whole kernel corn, thawed
- Water as needed
- Toppings: cilantro, low-fat sour cream, green onions, low-fat cheddar cheese
Preparation
Step 1
Cook carrots and onion 7 minutes in hot oil in pot on medium. Stir in seasoning. Cook 2 minutes. Stir in remaining ingredients, except toppings.
Bring to a boil; cover, reduce heat to medium-low. Simmer for 30 minutes, stirring occasionally. Serve with toppings.
