White Bean and Chicken Sausage Soup

Ingredients

  • 1/2 lb chicken sausage
  • 2 cloves chopped garlic
  • 6 cups chicken broth
  • 1 15.5 oz can cannellini beans (rinsed and smashed)
  • 1 small head escarole (torn)
  • 1/2 teas kosher salt
  • 1/4 teas pepper
  • olive oil

Preparation

Step 1

Brown sausage in 2 tbls of olive oil 3-5 mins
stir in garlic and cook 2 more mins
add chicken broth
add rest of ingredients simmer for 20 mins
