Ingredients
- 3 c cooked rice
- 1 lg tomato, seeded and chopped (2/3 c)
- 3/4 c chopped sweet onion
- 3 Tbsp snipped fresh cilantro
- 3 Tbsp lemon juice
- 2-3 Tbsp seeded and finely chopped fresh jalapeno
- 2 Tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 avocado, chopped
- 2 Tbsp lime juice
- Shredded Romaine lettuce
Preparation
Step 1
In a large bowl combine rice, tomato, onion, cilantro, lemon juice, jalapeno, olive oil, salt and pepper.
Toss avocado with lime juice; stir into rice mixture. Cover and chill for 2-8 hours.
Spoon on top of shredded romaine lettuce.
Serve with lime wedges.
