Ingredients
- 7 oz corkscrew pasta, cooked
- 1-1/2 c cubed Swiss cheese
- 6 oz sliced Genoa salami - strips
- 1 c thinly sliced cauliflower
- 1 c sliced zucchini
- 1/2 c chopped green pepper
- 1 small onion, thinly sliced
- 2 medium tomatoes, added when ready to serve
- 1/2 c sliced black olives
- 1/4 c shredded Parmesan cheese
- 1/4 c chopped parsley
- 1/4 c vinegar - add a little sugar to taste - 3 Tbsp)
- 2 garlic cloves, minced
- 2 tsp dry basil
- 1 tsp oregano
- 1/2 tsp pepper
- 3/4 c Hendrickson's Original Sweet Vinegar & Oil Dressing, Fat Free
- (The recipe call for only 3/4 cup, but we usually use the whole bottle.)
Preparation
Step 1
Combine all ingredients.
Add dressing as needed.
