Carrot Muffins

Ingredients
- 1 3/4 c. raisin bran
- 1 1/4 c. flour
- 3/4 c. sugar
- 1 1/4 t. baking soda
- 1 t. ground cinnamon
- 1/4 t. salt
- 1 egg
- 3/4 c. buttermilk
- 1/4 c. canola oil
- 3/4 c. finely chopped peeled tart apple
- 3/4 c. grated carrots
- 1/4 c. chopped walnuts

Preparation
Step 1
In a bowl, combine the first six ingredients.
In another small bowl, beat egg, buttermilk, and oil.
Stir wet ingredients into dry ingredients until just moistened.
Fold in apple, carrots, and walnuts.
Fill paper-line muffin cups or cups coated with cooking spray 3/4 full.
Bake at 400 degrees for 20-23 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pan.
Serve warm.
