Ingredients
- 1 pound boneless, skinless chicken breast, chopped
- 1/4 cup reduced sodium soy sauce
- 1 3inch piece of fresh ginger, peeled and grated
- 1 tablespoon plus 1 teaspoon cornstarch
- 3 cloves garlic, minced
- 1 cup low sodium chicken broth
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1/2 medium red pepper, cut into thin strips
- 4 cups broccoli florets
- 2 cups cooked brown rice, optional
- 1/4 cup chopped roasted peanuts, optional
Preparation
Step 1
Place chicken in a large bowl. In another small bowl, whisk soy sauce, ginger, cornstarch, 2 cloves garlic, and broth. Pour mixture over chicken and toss to coat. Marinate at room temp. for 10 minutes.
Warm oil in a large skillet over medium-high heat. Add onion and red pepper and cook stirring constantly until tender. Add remaining garlic and cook for additional minute. Add broccoli and cook until slightly softened.
Pour chicken and marinade into skillet. Cook until chicken is no longer pink and sauce is warmed and thickened. Serve immediately with brown rice and garnish with peanuts if desired.
