Fajita Omelette

Ingredients

  • 1 Boneless Skinless Chicken Breast
  • 1/2 teaspoon Vegetable Oil
  • 1/2 teaspoon lime juice
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon cumin
  • Dash of each: garlic poder and black pepper
  • 1/2 green bell pepper(1/2 cup)
  • 1/2 cup diced onion
  • 1 small tomato diced
  • 2 teaspoons butter
  • 5 Large Eggs beaten
  • 1 Cup Shredd Cheddar Cheese
  • 1/3 up Salsa
  • 2 Tablespoons Sour Creme

Preparation

Step 1

Pound Chicken Breast between 2 sheets of wax paper until 1/4th inch thick
now cut into bite size pieces
Pour oil into skillet over high heat add the mea and saute it for a couple of minutes until it starts to brown
add: lime juice to the meat
blend the spices together in seperate bowl then add mixture to the meat
Add Pepper and Onion to the meat and simmer for 5 to 10 minutes or util veggies start to brown up
add tomatoes and cook another 2 minutes
With another Large Skillet over medium heat add 1 teaspoon of butter to the pan
when the butter has melted add half of the beaten eggs to the pan and swirl to coat the entire bottom of the pan
cook the eggs for a minute orso until the tp surfaceis beginning to get firm be sure the bottom is not getting too brown if so turn down heat
Sprinkle 1/4 cup of cheese down thecenter of the eggs
spoon a heaping tablespoonf salsa over the cheese
spoon 1/4th of the meat and veggie onto of the salsa fold over the edges over the center of the omelette and let it cook for another minute or so
carefully flip the omelette over the pan withthe seam side down let it cook another minute then slide out of pan
when both omelettes are done spoon rest of meat/veggie mixture over top of omelette
sprinkle with cheese and 2 Tablespoons of Salsa and a dollop of Sour Creme
