Grilled Cheesy Potato Packet

Ingredients

  • 1 1 gas or charcoal grill. Spray 1 (18x13-inch) sheet of heavy-duty foil with cooking spray. Place potatoes on center of foil. Drizzle with oil; sprinkle with seasoned salt.
  • 2 2 1/2-inch to sides of foil over potatoes so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • 3 30 4 to 5 over medium heat. Cover grill; cook 30 minutes, turning once. Carefully open packet; sprinkle cheese over potatoes. Cover loosely; let stand 4 to 5 minutes or until cheese is melted.

Use 4 cups seasoned potato wedges with skins instead of the O'Brien potatoes and skip the vegetable oil and seasoned salt. If you like heat, sprinkle potatoes with Monterey Jack cheese with jalapeño peppers.

When we were out in Okla. visiting universities there, we got to visit Eskimo Joe's Restaurant . They had the most incredible cheese fries. My husband loves making these potatoes and adding canned chili on top of them..like Texas Pete or Hormel Chili without beans....just another way to make them even better.

This is the best, easiest side dish for camping and now we use it the rest of the year. It's a favorite and requested all the time. It takes few ingredients and yet it tastes like you fussed over it. Using the O'Brien hash browns makes this a breeze to prepare. We did change from foil to foil pans, much easier to handle on the campfire.
