Lebanese Cabbage Salad

Ingredients
- Lebanese lemon salad dressing:
- 1 lb green cabbage
- 2 tomatoes, plum, seeded and chopped
- 1/3 cup parsley, finely chopped
- 1/3 cup scallion, diced (white and green parts)
- 1/4 cup fresh lemon juice
- 1/4 cup extra virgin olive oil
- 1 1/2 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper, or to taste

Step 1
1. Cut the cabbage in half. Cut away the hard core and slice the cabbage crosswise into 1/2 inch strips, then crosswise into 3/4 inch pieces. Should be 4 cups; if there is extra, set aside for other use. Place cabbage in a bowl.
2. Add tomatoes, parsley and scallions and toss with fork to combine.
3. In a separate bowl, make the Lebanese lemon salad dressing: Mince garlic, add salt to garlic, using side of knife, mash into a "paste". Add to bowl. Add lemon juice, olive oil and pepper and blend well.
4. Pour the freezing over the salad and toss for 1 minute to coat well. Then let sit 10 minutes for the flavors to meld.
