Ingredients

  • 2 1/4 c. all purpose flour
  • 2/3 c + 2 T confectioner's sugar
  • 1/2 c trans free spread or unsalted butter, cut into small pieces
  • 3 lemons
  • 1 c fat free sugar free sugar
  • 1 1/2 c. granulated sugar

Preparation

Step 1

1. preheat oven to 350 degrees. coat jelly roll pan with cooking spray

2. stir 2 cups of the flour and 2/3 cup of the confectioner's sugar in medium bowl. Cut in spread until mixture resembles coarse meal. press firmly and evenly into bottom of prepared pan. Bake 10 to 15 minutes, or until lightly browned. cool in pan on rack.

2 grate zest from 2 of the lemons into medium bowl. Cut all lemons in half and squeeze juice into bowl. Whisk in eggsubstitue, granulated sugar, remaining flour until smooth. Pour over prepared crust.

4. Bake 18 - 20 minutes, or until filing is set when lightly touched in center. Cool in pan on rack. When completely cooled, sift remaining confectioners sugar over top. Cut into bars and serve.
