Broiled Chicken with New England Barbecue Sauce

This sauce flavors the chicken with a sweet taste unobtainable any other way.

Ingredients

  • For the barbecue sauce:
  • 1/2 medium onion, finely chopped
  • 1 clove garlic, finely chopped
  • 12 ounce bottle chili sauce
  • 1/3 cup maple-flavored syrup
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon ground hot pepper
  • 1/4 cup apple cider vinegar
  • ...................................
  • For the chicken:
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground hot red pepper flakes
  • 4 chicken breast halves, with bones and skins, rinsed and patted dry

Preparation

Step 1

For the Barbecue Sauce: Combine the ingredients in a medium-sized saucepan. Bring to a simmer over moderate heat and cook, stirring frequently, for 15 minutes. The sauce may be stored, covered, in the refrigerator for up to a week.

In a small bowl, mix the garlic salt, black pepper and red pepper flakes. Sprinkle the chicken breasts with the spice mixture and allow to stand at room temperature for about 20 minutes. Heat the broiler to high.

Lightly oil a broiler rack and put the chicken on it. Broil the breasts about 5 inches from the heat for 25 to 30 minutes, turning them often. During the last 10 minutes of cooking time, brush the chicken with the barbecue sauce. Serve immediately with additional barbecue sauce, if desired.
