Farmer's Mud Pie

Ingredients

  • 2 cups chocolate ice cream (1 pint)
  • 2 cups coffee ice cream (1 pint)
  • 18 ounces Oreo chocolate cookies (crushed - or chocolate wafers)
  • 1 ready made pie crust (optional)
  • 8 ounces slivered almonds (toasted)
  • 1/2 cup almonds (chopped)
  • 1/2 cup Kahlua (or chocolate liqueur)
  • 4 tablespoons fudge sauce (to taste)

Preparation

Step 1

In a small (dry) sauté pan, toast the slivered almonds for a few minutes on medium high heat until golden brown, stirring often to prevent almonds from burning. Set aside to cool.

Discard filling from Oreo cookies. Crush chocolate cookies and pat into an 8-9 inch pie shell.

In a mixing bowl or blender, combine chocolate and coffee ice creams, chopped almonds and Kahlua. Blend without too much melting until soft but still thick.
Spoon ice cream mixture into chocolate pie crust. Top with fudge sauce and slivered almonds. Freeze immediately and let sit overnight.
