Turkey/Chicken Fried Rice

Ingredients

  • 2 cups reduced sodium chicken broth
  • 1 cup uncooked brown rice
  • 2 cups cubed cooked turkey or chicken breast
  • 3 tablespoons reduced sodium soy sauce
  • 1 egg, lightly beaten
  • 1 small onion, chopped
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped celery
  • 1 tablespoon olive oil
  • 1 cup shredded romaine

Step 1

In a large saucepan, bring broth to a boil. Stir in the rice. Reduce the heat and simmer for 45-50 minutes until liquid is absorbed. Remove from heat and cool. Refrigerate overnight.

In a small bowl, combine turkey or chicken and soy sauce, cover and refrigerate. In a large skillet, cook and stir egg over medium heat until completely set. Remove and set aside.

In the same skillet, saute the onion, green pepper and celery in oil until tender. Add rice and turkey or chicken, cook and stir over medium heat for 6-8 minutes. Add lettuce and reserved egg. Cook and serve for 1-2 minutes. Serve immediately.
