Ingredients

  • 1/4 cup butter
  • 1 1/2 cups chopped onion
  • 1/3 cup sliced celery
  • 3 cups sliced carrots
  • 1 1/2 cups diced turnip
  • 1/2 tsp salt
  • 1/4 tsp thyme
  • 1/4 tsp pepper
  • 5 cups chicken broth
  • Pinch cayenne
  • Pinch nutmeg
  • 1/2 cup cream (optional)

Preparation

Step 1

Saute onion and celery. Add other ingredients and bring to a boil. SImmer approximately 25 minutes. Puree in blender. Stir in cream if desired. Freezes well. Garnish with dill weed - fresh preferably.
