Cider Baked Apples with Cinnamon Sugar

Ingredients
- 4 large apples, one strip of peel from the stem end removed, rinsed, dried and cored.
- 1/2 cup of granulated sugar
- 1/2 to 1 tsp. ground cinnamon (or more)
- 1 cup apple cider or enought to come 1/2 in up the side of the pan.

Step 1
Heat oven to 350o. Place apples in 9in pyrex pie plate or 8in square dish. Mix cinnamon and sugar, then sprinkle over and inside apple cavities. Pour cider in the pan.
Bake apples, basting every 15 mins. until tender when pierced with thin knife or cake tester. 45 to 55 mins. Be careful not to over bake or the skinds with split and the apple will lose its shape. Serve warm with ice cream or whipped cream.
