Baked Potato Soup

  • 4 large potatoes
  • 2/3 cup flour
  • 3/4 tsp salt
  • 2/3 cup butter
  • 6 cups milk
  • 1/2 tsp pepper
  • 4 green onions - chopped
  • 12 slices of bacon cooled and crumbled
  • 1 1/2 cup shredded cheddar cheese
  • 8 oz sour cream



Step 1

Preheat oven to 400

Bake potatoes for 45 mins - 1 hour. Let cool, cut in half lenghtwise scoop out pulp, set aside and discard skins.

Melt butter in pan over low heat, add flour stirring until smooth. Cook 1 minute stirring constantly. Gradually add milk and cook over medium heat until bubbly. Add potato pulps, salt, pepper, 2 tbl green onions, 1/2 cup bacon and 1 cup cheese. Cook until thoroughly heated. Stir in sour cream.

Add extra milk if desired (especially when reheating)

Top with remaing bacon, onion and cheese.
