Salad Dressing/Roasted Garlic Dressing

Ingredients
- 5-6 cloves garlic, unpeeled
- 1/4 cup olive oil
- 2 medium tomatoes, chopped and drained
- 2 tbsp freshly squeezed lemon juice
- 3 chopped scallions, white parts only
- 2 tbsp any herb or wine vinegar
- 1/3 cup finely chopped basil

Step 1
Heat oven to 350 degrees. Brush the garlic colves with 1 tsp olive oil. Roast the oiled garlic cloves in a pan until golden and soft (about 10-15 minutes). Watch carefully so garlic doesn't overbrown. Remove and cool. When cool enough to handle squeeze out garlic pulp and combine the pulp with the reserved olive oil and the rest of the ingredients in a blender. blend until smooth and use to dress any mixed green salad.
