Dessert Crepes

Ingredients

  • 2 eggs
  • 1 c. milk
  • 1/3 c. water
  • 1 c. flour
  • 2 T. sugar
  • 1 t. vanilla
  • 2 T. butter

Preparation

Step 1

Combine all ingredients in a blender. Blend 5 sec. until smooth. Repeat as necessary. Refrigerate 1 to 24 hrs.
Heat pan over medium-high heat. Wipe pan with butter. Pour 3 T. batter rotating to coat pan. Cook till almost dry on top & brown on edges (about 1 min.). Flip & cook 15 sec.

Caramel apple filling:
3 large Granny Smith apples
2 T. butter
⅓ c. sugar
½ t. cinnamon
3 T. chopped nuts
Melt butter in skillet, add sliced apples, sprinkle with sugar, cook till amber & apples tender. Mix in cinnamon & nuts. Put on crepe, fold, sprinkle with powdered sugar; serve with whip cream or ice cream.
