Potato Pancakes

Ingredients

  • 2 large Potato ; peeled
  • 1 small Onion
  • 2 Eggs
  • 4 tablespoon Milk
  • 2 tablespoon Butter ; melted
  • 1/4 cup Flour
  • Salt & pepper ; to taste

Preparation

Step 1

Insert shredder disk in food processor. Cut potatoes and onion to fit chute. Grate.

In a medium mixing bowl, combine eggs, milk and melted butter. Mix at medium speed. Add flour, salt and pepper - mix.

Pour this mixture over potatoes and onion. Stir to mix. Pour 1/4 cup batter onto a hot greased griddle. Spread to make a 4" pancake.

Brown on each side. Serve immediately. Makes 8-10 pancakes.
