Asparagus with Sweet and Sour Dressing

Ingredients

  • 2 tablespoon Sugar
  • 2 tablespoon Vinegar
  • 2 tablespoon Vegetable oil
  • 1/4 teaspoon Dry mustard
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Paprika
  • 1 pound Asparagus
  • 1/4 cup Red onion ; minced

Preparation

Step 1

Combine sugar, vinegar, oil, mustard, salt and paprika in a small container with a tight-fitting lid. Shake to dissolve sugar.

Bring 1 inch of water to a boil in a wide skillet. Trim ends of asparagus, wash and when the water boils, add the asparagus. Cook 2 to 5 minutes, depending on thickness. Move asparagus around as necessary to expose it to the heat. Drain. If desired, pat dry with absorbent toweling. Place on a serving dish and sprinkle with red onion. Drizzle the dressing over the asparagus.

Serve as a side dish salad.
