Calico Stuffed Peppers (Micro-wave)

Ingredients

  • 3 large green peppers
  • 1 lb bulk sausage or ground beef
  • 3/4 cup chopped onion
  • 1 (8 oz) can whole kernel corn, drained (can substitute cooked rice for corn)
  • 3 Tbl catsup
  • 1/4 tsp garlic salt
  • 1 (8 oz) can tomato sauce
  • 1/2 cup grated cheddar cheese

Preparation

Step 1

Wash peppers and cut in half lengthwise. Cut stems and scoop out seeds. In covered 4 qt casserole dish cook peppers on high for 4 minutes.

In 2 qt casserole dish cook sausage and onion on high for 5 minutes, stirring once. Drain excess fat. Stir in corn (or rice), catsup and garlic salt.

Spoon mixture into peppers. Return stuffed peppers to 4 qt casserole dish. Pour tomato sauce over all. Cover and cook on high for 5 minutes. Sprinkle with cheese. Cook uncovered for 1 additional minute.
