Ingredients

  • 1 cup ricotta cheese
  • 1 lb. frozen spinach thawed and squeezed dry.
  • 1 cup parmesan cheese
  • 2 eggs + 2 egg yolks
  • 1/4 tsp. nutmeg
  • 1 tsp. salt and pepper
  • 5 Tbsp. flour + 1 cup for coating
  • marinara sauce heating to pour on top

Preparation

Step 1

in a large bowl, mix ricotta, spinach, parmesan, eggs and yolks. stir in spices and flour. form mixture into small flattened balls. dredge the formed gnudi in flour to coat, tap off excess flour
in batches, drop gnudi in boiling water, do not overcrowd the pot. when they float, they are done, about 4 minutes...remove from pot with slotted spoon
do not over cook, they will be mushy.
arrange on a platter and drizzle with marinara sauce
