Spicy Coca-Cola Jalapeno Glaze Chicken Wings

Ingredients

  • 1 cup Coca-Cola Classic
  • Juice of 2 limes
  • 1 1/2 cups packed light brown sugar
  • 4 Jalapeno peppers, minced
  • 2 pounds chicken wings (about a dozen), patted dry with paper towels
  • salt and pepper

Step 1

Combine the Coke, lime juice, brown sugar and jalapeno peppers in a saucepan and bright to a boil over high heat. Reduce heat to medium-low and simmer until the sauce is thick and syrupy, about 30 minutes.

While the sauce is simmering, preheat your oven's broiler, with a rack approximately 4 inches below the heating element. Line a baking sheet with aluminum foil and place and ovenproof rack on top of the foil-lined baking sheet.

Place the chicken wings in a large bowl and season with salt and pepper. Pour approximately half of the glaze over the wings and toss to coat.

Place the wings on the rack and broil the wings for approximately 10 minutes each side, brushing the reserved glaze twice on each side.

Transfer to a platter and serve immediately.

Serves three to four as an appetizer.
