Preheat oven to 225F. Wash and dry tomatoes. Cut in half lengthwise (very large tomatoes should be quartered lengthwise).
Spread tomatoes on cookie sheets cut side up. Bake for 10-12 hours. Remove from oven when dry and prune-like but still pliable.
Watch carefully during the last hour or two of cooking as tomatoes can go from being perfect to being scorched very quickly. Let cool.
Store either in plastic bags in the freezer or in jars covered with olive oil. Oil may be flavoured with a clove of garlic and a few basil leaves, if desired.
Tips: I lined my cookie sheets with parchment paper. Because my oven is hot, I did the tomatoes at 200F for about 7 1/2 hours. After 4 hours, I switched the bottom sheets with the top sheets.
