Blueberry Muffins - Best

  • 1/2 c. butter, softened
  • 1 c. sugar
  • 2 eggs
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 1 tsp. vanilla
  • 2 1/2 c. blueberries

Preparation

Step 1

Cream together butter & sugar until creamy. Add eggs, beating well after each addition. Combine flour, baking powder, & salt. Add alternately to creamed mixture with milk & vanilla. Crush 1/2 c. berries and add to batter. Fold in remaining blueberries & spoon into greased muffin pans. Sprinkle tops with sugar. Bake 30 min. at 375º. Cool in pan 5 min. & then turn out onto wire rack. Makes 12 muffins.
