    C vegetable oil

    large eggs

    C all purpose flour

    tsp baking soda

    tsp cinnamon

    tsp ginger

  • 1/2

    tsp salt

    C pumpkin puree or cooked, mashed pumpkin

  • CREAM CHEESE FROSTING

  • 1/2

    C butter

  • 1

    8 oz cream cheese

  • 1

    C confectioner's sugar

  • 2

    tsps vanilla

Directions

Preheat oven to 350 bakes 35-40 minutes Mix pumpkin, sugars, eggs and oil. Add dry ingredients and mix until smooth. For Frosting: beat softened butter until smooth. Gradually add pieces of softened cream cheese. Mix in vanilla and powdered sugar and whip fluffy. Cool cake completely before frosting
