Spinach Phyllo Roll-ups

Ingredients

  • 1/2 cup finely chopped green onion
  • 1 egg
  • 1 tub (250g) spreadable cream cheese
  • 1 cup Kraft Greek Salad Feta with Oregano
  • crumbled cheese
  • 1 package (300g) frozen chopped spinach,
  • thawed, drained
  • 9 sheets frozen phyllo pastry, thawed
  • 1/3 cup melted butter or no stick cooking spray

Preparation

Step 1

Preheat oven to 375. Combine all ingredients except the phyllo and butter in a small bowl until well blended. Set aside.

Lay out one sheet of phyllo on a clean work surface. Brush with butter or spray with cooking spray. Repeat process and layer with 2 more sheets of phyllo. Place remaining phyllo between sheets of plastic wrap so as to not dry out and set aside.

Spread a third of the spinach mixture along one short side of the phyllo.

Fold the ends in and roll up making a log. Repeat method using remaining phyllo sheets, making 2 more logs. Spray logs with cooking spray. To prevent phyllo from cracking, score log at 1 inch intervals.

Place logs on baking sheet and bake for 25 minutes or until golden brown. Let cool 5 minutes. Place ona cutting board and with a serrated knife, slice each log into 10 slices.

Make ahead:
To freeze, place uncooked logs in large freezer bags or wrap tightly in plastic wrap and freeze. Take out of freezer 10 minutes before baking. Continue with baking directions.
