Sherbet Dessert

Ingredients

  • Crust:
  • 3 c. crushed Ritz crackers
  • 8 T. sugar
  • 8 T. butter, melted
  • Mix together & pat in 9 X 13 pan;
  • Freeze.
  • Mix together:
  • 1 qt. sherbet (orange or other favorite)
  • 1/2 gal vanilla ice cream
  • Spread on frozen crust. Freeze.

Preparation

Step 1

***Topping:
6 T. lemon juice
9 T. butter
1½ c. sugar
3 eggs, well beaten
Cook together until thickened.
Cool COMPLETELY!!!
Put on top of well-frozen sherbet.
Freeze well. Take out a ½ hour before serving.

(We like more crust so this recipe includes doubled crust; you can adjust to amount of crust you like.)
(We like more topping so this recipe includes 1½ times what original recipe called for so you can adjust if you prefer less topping.)
