Ingredients

  • 3/4 c. butter
  • 2 1/8 c. sugar
  • 3 large eggs
  • 2 t. vanilla
  • 3 c. flour
  • 1 1/2 t. baking soda
  • 1/4 t. salt
  • 1 1/2 c. buttermilk
  • 2 t. lemon juice
  • 1 1/2 c. mashed ripe banana
  • FROSTING
  • 1/2 c. butter, softened
  • 8 oz. cream cheese, softened
  • 3 1/2 c. powdered sugar
  • 1 t. vanilla

Preparation

Step 1

Preheat over to 275.
Grease and flour 9 x 13 pan.
In a small bowl, mix banana with lemon juice; set aside.
In a medium bowl, mi flour, baking soda, and salt; set aside.
In a large bowl, cream 3/4 c. butter and 2 1/8 cu. sugar until light and fluffy.
Beat in eggs, one at a time, then add vanilla.
Beat in the flour mixture, alternating with the buttermilk.
Stir in bananas.
Pour batter into prepared pan and bake for 60 minutes or until toothpick inserted in center comes out clean.
Remove from oven and place directly into the freezer for 45 minutes (this will make the cake very moist).

For frosting, cream the butter and cream cheese until smooth.
Beat in 1 t. vanilla.
Add powdered sugar and beat on low speed until combined, then increase to high speed until frosting is smooth.
Spread on cooled cake.
