Scalloped Sweet Potatoes

Ingredients

  • 3-4 large sweet potatoes, sliced thin
  • 1 medium yellow onion, sliced
  • 2 cans of coconut milk, mixed with 1 T. arrow root starch (for thickening)
  • 1 T. pumpkin pie spice
  • salt and pepper
  • 1 cup of your favorite cheese (optional)

Preparation

Step 1

Mix sweet potatoes, onions, and spices. Lay in a 13x9 baking dish. Pour coconut milk mixture over them. Cover and bake at 375 F for about 1 hour or until tender. Remove cover and sprinkle with cheese. Bake another 10 minutes until cheese melts. (You can turn on the broiler on low for a few minutes to brown cheese if desired.)
