Banana Muffins

Ingredients

  • 1 c. brown sugar (201 g.)
  • 1 c. white sugar (191 g.)
  • 1/2 c. butter (115 g.)
  • 2 eggs
  • 1 c. milk (244 g.)
  • 1 tsp. soda
  • Pinch of salt
  • 3 1/2 c. flour (348 g.)
  • 4 lg. bananas, smashed
  • 1/2 c. walnuts &/or Dates (58 g.)

Preparation

Step 1

Cream together sugars & butter. Add eggs one at a time, mixing well after each. Add milk. Sift together soda, salt, & flour; add & mix well. Add smashed bananas. Mix. Add walnuts &/or Dates. Spoon into muffin tins with paper, or pour into 2 greased & floured bread pans. Bake at 350° for 25 to 30 min.
