Vegetable Pie

Ingredients

  • (Non-stick spray)
  • 1 refrigerated pizza crust
  • (1 T olive oil)
  • (1 t minced garlic)
  • (1 t dried basil)
  • 1 c chopped onion
  • 16 oz sliced fresh mushrooms
  • 16 oz pkg mixed Chinese vegetables,
  • thawed
  • 3 eggs
  • (1/2 c milk)
  • 3/4 c ricotta cheese

Preparation

Step 1

Preheat oven to 350° F. Coat 9”x13” pan w/nonstick spray. Form pizza crust into bottom of pan.
Place crust into oven for apx 2-3 min. Remove, set aside. In lg skillet, heat olive oil over med heat.
Add garlic, basil and onion. Cook until onions are soft and slightly browned. Add mushrooms and mixed vegetables. Stir well and cover. Let simmer until vegetables are slightly soft. Drain vegetables, if necessary. Place vegetable mixture into crust. In bowl, combine eggs, milk and ricotta cheese.
Pour over vegetable mixture. Bake until eggs are firm in middle, apx 50 min. Let sit for 10 min before serving.
