Ingredients

  • 2 1/2 cups water
  • 1 cup round-grain rice
  • 1/2 tsp. salt
  • 2/3 cup raisins
  • 2 cups milk
  • 1 tsp. grated lemon rind
  • 1/4 cup butter
  • 1 1/4 cups cream
  • 4 egg yolks
  • 1/4 cup sugar

Step 1

Bring water to boil, add salt and rice. Simmer for 10 minutes. Meanwhile cover raisins with boiling water and leave for 5 minutes. Drain rice and raisins. Add raisins, milk, sugar and lemon to the rice. Pour into a greased baking dish Mix cream and egg yolks together and then pour over rice mixture. Dot top with butter and sprinkle cinnamon on top. Bake at 350 degrees for 30 minutes until set. ( MAY
