Citrus Pasta Florentine

Ingredients
- 12 ounces Angel Hair pasta, uncooked
- 2 navel oranges
- 3/4 cup sliced green onions
- 1 cup fat-free half and half
- 10 ounces baby spinach
- 1/4 cup grated Parmesan cheese
Preparation
Step 1
Cook the pasta according to package directions. Meanwhile, grate the zest from 1 orange then squeeze the juice from both. In a large skillet, bring the orange juice and green onions to a simmer; add half & half, spinach and grated zest. Simmer for 1 minute then remove skillet from heat. Drain pasta and return to pot; add orange sauce and toss to coat. Top with Parmesan cheese before serving.
SERVING SUGGESTION: A big salad tossed with Easy Balsamic Vinaigrette (see recipe); add some garlic toast.
GLUTEN FREE: Use your favorite gluten free pasta.
