Ingredients

  • 10 oz (300g) dried macaroni
  • salt
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 5 1/2 oz (150g) grated aged chedder cheese
  • 1 3/4 oz (50g) finely grated parmesan cheese

Step 1

Cook the macaroni in boiling salted water according the package instructions.
Drain and transfer to a shallow ovenproof dish.

Meanwhile, melt the butter in a saucepan.
Whisk in flour over low heat and cook for 2 minutes, whisking constantly, until the mixture bubbles and separates.

Take the pan off the heat and whisk in the milk, a little at a time, whisking well between each addition, until it has all been added and the sauce is smooth.
Return to the heat and cook, stirring until it thickens.
Reduce the heat to low and cook, stirring occasionally, for 5 minutes.
Be sure to whisk right into the edges of the saucepan, as this is where the sauce can burn if left undisturbed.
Add 3 1/2 oz (100g) of the chedder cheese and stir until it has melted.
Preheat the broiler to its highest setting.

Pour the sauce over the macaroni, and stir well to coat.
Sprinkle in the remaining 1 3/4 oz (50g) of cheddar cheese and the parmesan.
Place on a baking sheet and broil for 5 minutes, or until bubbling.
