Fried Okra Salad

Ingredients

  • 16 okra pods, washed and cut in half lengthwise
  • 1 c. buttermilk
  • Essence
  • 1 c. mayonnaise
  • 1/2 c. finely chopped green onion
  • Juice of 1 lemon
  • 1 tsp. Dijon mustard
  • 1 Tbsp. minced garlic
  • Salt and pepper
  • 1/2 c. cornmeal
  • 1/2 c. flour
  • 4 c. assorted baby greens
  • 4 grilled green onions
  • 2 Tbsp. chopped chives
  • 1/2 c. grated parmesan cheese

Preparation

Step 1

Marinate okra in buttermilk seasoned with Essence. Set in refrigerator for 30 minutes.

Combine mayonnaise, chopped green onions, lemon juice, mustard and garlic. Mix thoroughly. Season with salt and pepper.

Combine cornmeal and flour. Season with Essence. Dredge okra in flour mixture, coating completely. Fry okra, split-side down, for about 2 minutes, or until golden. Remove okra from fryer and drain on paper towels. Season with Essence.

Toss the greens with the dressing. Season with salt and pepper. Mound greens in the center of a plate. Arrange the okra around the greens. Garnish with grilled onions, chives, and cheese.
