  • Chicken Cacciatore
  • 3 pounds boneless skinless chicken thighs
  • 1/2 tsp sea salt
  • 1 tsp black pepper
  • 3 tbsp canola oil
  • 3 tbsp fresh garlic, chopped
  • 1 lb onion, diced
  • 3/4 lb green peppers, diced
  • 1/4 lb red peppers, diced
  • 1 lb mushrooms, washed and quartered
  • 3 tbsp fresh rosemary, chopped
  • 3 tbsp fresh oregano, chopped
  • 1/2 cup sherry wine
  • 3 lbs tomatoes, diced
  • 1 1/2 lbs tomatoes, puree
  • 1 cup water
  • Brown Sauce
  • 3 oz onion, diced
  • 1 1/2 oz fresh carrots, diced, 1/2"
  • 1 1/2 oz celery, diced, 1/2"
  • 2 1/4 oz olive oil
  • 2 1/4 oz flour
  • 1 1/2 oz tomatoes, puree
  • 1 bay leaf
  • 1 quart water
  • 1 oz beef bouillon
  • Wheat Pasta with Parsley
  • 1 1/2 lbs whole wheat pasta (of your choice)
  • 1 gallon boiling water
  • 3 tbsp olive oil
  • 4 tbsp fresh parsley, chopped

Preparation

Step 1

Cacciatore
Trim each thigh of all visible fat and cut into 4 pieces. Season with salt and pepper.
Heat oil in skillet of heavy pan. Sear chicken on all sides. Remove from pan.
Add garlic to pan, sweat for 30 seconds. Add onions, green and red peppers, and mushrooms. Saute for 5 minutes.
Add rosemary, oregano, sherry, diced tomato, tomato puree, water, brown sauce (recipe follows) and seared chicken. Bring to simmer.
Cover tightly and place in 350 degree oven for 60 to 80 minutes, until chicken is very tender and minimum internal temperature is 165 for 15 seconds.
Serve with 4 oz cooked wheat pasta.

Brown Sauce
Saute onions, carrots and celery into oil until onions are translucent, approximately 5 minutes.
Add flour, reduce heat and cook for 10 more minutes, stirring constantly.
Add water, boullion and tomato, stirring until slightly thickened.
Add bay leaf and simmer for 1 1/2 hours.
Season with salt and pepper.
Strain.

Penne Pasta
Place pasta in rapidly boiling water, stir while returning to a brisk boil.
Simmer for 8-10 minutes until tender.
Drain cooked pasta.
Toss hot pasta with olive oil and chopped parsley.
