Tomato Basil Soup

A friend cut this recipe out of the newspaper and gave it to me. It was labeled as La Madeline's version of the soup which I love. It took me about 6 months to make it because it looked WAY to easy to be as good as La Madeline's....but it is!

Ingredients
- 4 cans whole tomatoes
- 4 cups tomato juice
- 12-16 fresh basil leaves
- 1 cup heavy cream
- 1 stick butter
Preparation
Step 1
Put canned tomatoes and juice in soup pot and cook on medium low for 30 minutes.
Either use immersion blender or transfer in batches to blender. Add fresh basil and puree.
Add cream and butter and continue cooking until butter has melted.
Check to see if salt is needed and adjust seasonings to taste.
