Oat Cakes

Ingredients

  • 3 cups rolled oats
  • 2 tsp. salt
  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 1/2 cups shortening
  • 1 tsp. baking soda
  • Cold water to make soft dough (9-10 tbsp.)

Preparation

Step 1

Combine dry ingredients, cut in shortening, then rub in fine with fingers. Moisten the dough with water to form a dough you can roll out. Roll about 1/8" thick on rolled oats instead of flour. Cut into squares.

Bake at 350 deg. for 15 minutes.

Try one first to make sure oven is right. Cakes should be light and crispy.
