Ingredients
- 1 9oz. Pkg. Refrigerated Linguine or Fettuccine
- 1 C. Fresh Pea Pods
- 6 oz. Deli Roast Beef, sliced 1/4-in. thick
- 1/4 C. Sour Cream
- 11/2 tsp. All-Purpose Flour
- 1 C. Bottled Roasted Red Sweet Peppers, drained
- 2 Tbsp. Salsa
- 1/2 tsp. Sugar
- 1/2 C. Chicken Broth

Step 1
Cook Pasta in boiling, salted water till al dente ( approx. 6-8 min ); drain. Return pasta mixture to hot pan; cover & keep warm. Meanwhile, cut meat into bite-size pieces. In a sm. bowl, combine sour cream & flour; set aside. For sauce: In a food processor, combine roasted peppers, salsa & sugar. Cover & process till nearly smooth. Transfer mixture to a sm. saucepan. Stir in broth. Cook & stir over med. heat till bubbly. Stir in sour cream mixture. Cook & stir for 1 min. more. Stir in meat; heat through. Pour sauce over pasta mixture; toss gently to coat. Serve.
