Ingredients

  • 2 cups mixed and black olives (3/4#)
  • 2 tbsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 tsp dried oregano
  • 1/4 tsp crushed red pepper
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly groun black pepper
  • 1 tsp finely grated orange zest
  • 1 tbsp chopped flat leafed parsley
  • 1/2 tsp coarsely chopped rosemary

Step 1

Preheat oven to 450 degrees. On a small baking sheet toss the olives, olive oil, garlic. oregano. crushed red pepper, salt and pepper. roast until sizzling, about 15 minutes. Transfer the olives to a bowl and toss with orange zest, parsley and rosemary. serve warm or at room temperature.
