Ingredients

  • 2 lbs smoked sausage, cut into 1" slices
  • 3 cans (15 oz each) black beans, rinsed and drained
  • 1-1/2 cups each chopped onion, celery, and green pepper
  • 1 cup water
  • 1 can (8 oz) tomato sauce
  • 4 garlic cloves, minced
  • 2 Tsp dried thyme
  • 1 Tsp chicken bouillion granules
  • 1 Tsp white pepper
  • 1/4 Tsp cayenne peppers
  • 2 bay leaves
  • Hot cooked rice

Preparation

Step 1

1. In a large skillet, brown sausage over medium heat; drain. Transfer to a 5-qt slow cooker (or pot).

2. In a pot, combine all ingredients. Cover and cook until all vegetables are tender. Serve over rice.
